Dot 5 is Silicone based and only compatible with Dot 5 fluid. Dot 3, 4, and 5.1 are glycol-based and can be intermixed, although I wouldn't not recommend. Flush the system completely if changing from one fluid type to another. Obviously an emergency top off is a different store.
As you move up the numbers, the boiling point both Dry and Wet increase. Daily driver, then DOT 3 is most likely fine, but if doing all new fluid I would at least move up to Dot 4 at a minimum. Good Luck!
