I have a 13 inch steering wheel and manual rack. I don't see any problem with it. I do run skinny tires on the front (165/80/15 on 3 1/2 inch wheels) which I'm sure helps cut the steering effort.
But then I also have a spool rear and an ARB, both of which I'm usually told are no good on the street so maybe my opinion isn't worth much.

We're not fast racers, we're more what's known as half fast racers.
I have the classic chrome grant on my old school 86 build. It is fine, it does speed up the V8 steering a lot so, you need to be a bit careful.
Nice interior do you have a pic of your brake?
nice set up. I just installed my ebrake boot. where did you get the steering wheel?

Got this steering for my 18th B-Day in 1982. Grant "Sport 500" 13". It's been on my 1981 Mustang and a 86 Celica I had in the 90's.
Now it's on my 85 Coupe.
