Just picked up an 81 hatch, looks like the rear seat backs are hinged at the bottom but can't find a release lever to fold them down. Did all hatchbacks come with fold down seats or was that an option that this one doesn't have?

I believe the earlier cars were solid 1-piece back that folded down. The later cars had a split back that folded independently of one another. In the earlier cars, the release is at the top of the rear seat back...dead center. You can't miss it...at least, you can't if the carpet is removed. You'll need to slip your hand down behind the carpet on the back and you will feel it.
As Broncojunkie mentioned the release is dead center on the back of the upper seat section. Once you find it you pull/squeeze the latch to release. You might need to jiggle the seat and or the panel that holds the seats up to release, especially if the seats have not been folded down for awhile. Best of Luck!
