What year did they go to a separate pickup and sender? My 82 GT has the sender and pickup together as one. I have a fuel tank insert with -10 and -6 lines that I need to use and my stock sender is bunk (goes to zero when I still have more than 1/3 of a tank). In other words, what years should I try and find a newr gas tank and working sender from?

They started the separate pickup/sender as early as 1983 with the early EFI cars. More commonly, you can use any 86-93 tank. There are some decent repro's out there if you want to stay away from used tanks.
One thing you will need though, is the 83-86 EFI fuel sender. The fuel gauge in the 87-93 dash's is different and the senders are different as well.
NOS is about $99.00 (E3ZZ-00009275-C) from texas mustang, but if you can find a good used 1986 Mustang GT sender, that will be fine.
When I did my EFI conversion, I ran an 87+ tank, 86GT sender, and the Grantelli pickup to Paxton external pump for my first motor combo. Worked out perfect, and the fuel guage worked like it should.
